Huntingdon Fidget Pie
I found this recipe while researching my contribution for our Harvest Supper meeting. Our challenge was to provide a seasonal dish cooked from local ingredients. You can't get much more local than apples from the garden, so that was my starting point. The Great British Kitchen website soon turned up this traditional Harvest Pie:
The only variations I made were to include some potato in the mix (as per the Shropshire variant), and to double the quantities so everyone got a chance to try a little.
According to the entry for the very similar Shropshire Fidget Pie, "the name of this pie is said to have come from the fact that it was originally 'fitched' or five-sided in shape." However, Stefan's Florilegium suggests the origin is Fitchett, after the slang for apple, while Anglesey Abbey's site claims that "the pie's fascinating name is said to have come about because the ingredients tend to sink and shift about during cooking!" Not sure what to make of that one, though it is backed up here.
Anyway. here are a few Fidget Pie recipes from other web sites. Just about the only common ingredient is the apple, so maybe the Fitchett idea has some basis.
