Believe it or not this is my interpretation from a Japanese recipe by Nobuyuki Matsuhisa

Select ripe small/medium sized tomatoes still on the vine. In our case I used Midi Plum Tomatoes, (Italy), and Dutch Round.

We have had my Parents in Law visiting for 3 weeks and I have finally secured Dina's recipe for a family favourite--her Spinach Strudel.

This recipe is doubly seasonal, so I hope it tempts Slow Food members. It is offered with suggestions that are best used as a launch pad for your own personal preferences and flights of fancy.
